Creamy Southern Style Coleslaw Recipe

This creamy Southern style, Caribbean inspired coleslaw recipe is an all time easy recipe. Only 5 ingredients! First, it's super creamy. Next, it's slightly tangy. And of course, Duke's Mayonnaise is still a must. Tip: finely shredded cabbage is best. My go to pre-packaged coleslaw mixes are the Fresh Express 3 Color Blend Coleslaw Mix or the Fresh Express Diced Southern Slaw Mix.

Equipment

  • large mixing bowl
  • vegetable peeler
  • hand held grater or zesting tool
  • chopping board and knife

Ingredients
  

  • 1 pack Fresh Express 3 Colored Coleslaw Mix or Diced Southern Slaw Mix
  • 2 TBSP White sugar
  • ½ TBSP White vinegar
  • ½ CUP Duke's Mayonnaise I use the Duke Light Mayonnaise for this recipe
  • cup grated yellow onion
  • ¼ TSP ground black pepper
  • salt and lemon juice to taste

Instructions
 

  • Add Duke's Mayonnaise, sugar, white vinegar, grated onion, and black pepper to a large mixing bowl and mix well
  • Add coleslaw package to wet ingredients and fully incorporate.
  • Add minimal salt and/or fresh squeezed lemon juice to taste.
  • For best results, serve cold. This does not freeze well. Use within 3 days.
