Using a cup attachment for your blender when cream cheese is cold, put cream cheese in cup and give a quick pulse. Less than 30 seconds. As the recipe calls for the fat-free cream cheese to get the proper consistency, use this method.
Drain the pineapple juice and add only the pineapple to cup and pulse again for less than 30 seconds.
Scoop mixture into a mixing bowl and mix in powdered stevia with a mixing spoon or whisk.
Fold in cool whip.
Serve immediately, or chill.
